Ingredients

 

5 Eggs

280g Sugar

380g Roughly chopped dark chocolate

250g Unsalted butter

70g Plain flour

30g Cocoa powder

125g Toasted and roughly chopped hazelnuts

125g Toasted and roughly chopped almonds

110g Toasted and roughly chopped pistachios

150g Roughly chopped milk chocolate

 

Method

 

Whisk together the eggs and sugar on the machine until thick and pale

 

Meanwhile melt the chocolate and the butter in the microwave or in a metal bowl placed over a pan of simmering water

 

Once the chocolate and butter have cooled, fold in the egg and sugar mix into the chocolate and butter mix before folding in the dry ingredients last

 

Mix until well incorporated before pouring into a lined tray and cooking at 160c until a crust has formed on top but the middle is still slightly gooey when tested with a knife
